Heading to Iowa to visit the Fam

In a couple weeks, I am going home to visit the family and attend the family reunion. It will be a blast. My sisters, brothers and the grandkids will all be there. I think the last time we were all together was back when we buried Dad 13 years ago.

The trip will be a short one – 5 days and 4 nights. But I am really looking forward to some time where I can visit with my sisters. And I get all the visiting done in one shot with the family reunion.

Lots of pictures will be taken, lots of food eaten (I’m so not worrying about my diet while I am back there), and lots of visiting will be done.

And They’re OFF!!!!!!

Wow! Right now I’m kind of amazed because my little t-shirt biz is off and running. I need to spend some time this weekend working on it and getting products up. I also need to do some cleanup on one of the designs and start working on the next one.

I’m kind of pleased by this because it was totally unexpected.

Krista’s Thai Beef Salad

I got this from my friend Krista on one of the Fitness boards and modified it so that it’s lower carb. The salad can be eaten by itself or with meat.

1 pkg broccoli slaw
1/2 purple onion diced
1/4 cup Cilantro chopped
1/4 cup Slivered Almonds
1/2 cup Newman’s Own Low Fat Sesame Ginger Dressing

Beef Steak grilled how you like it.

In bowl mix Broccoli Slaw, onion and Cilantro in bowl. Add Dressing and stir to coat (if you want more dressing you can add it). Put in the fridge for an hour.

While salad is chilling, you can grill the steak. I used a piece of tenderloin that was seasoned garlic powder and pepper grilled rare.

Food Labels

I dislike the idea of labeling food as “good”, “bad”, “clean”, “unclean” and “comfort”. Overall there is nothing inherently good or bad about a food – it has no morals how can food be good or bad? There is nothing “clean” or “unclean” about food – your body doesn’t distinguish between the nutrients it gets from a mcdonald’s hamburger and a baked chicken breast with broccoli. And food isn’t something that is supposed to comfort – comfort is something that you get from another human being.

I think by labelling foods in this manner we end up not taking responsibility for the choices for our food choices that we make. In the past, I’ve choosen to overeat, not use portion control, and eat overly processed foods. These are not the choices I generally make now. I’m getting to the point where I don’t even like the word “cheat” in relationship to food, because most of the time, if you really want something, you can fit into your macros for the day with a little pre-planning. You might have to move some things around, but generally it can be done. I did it the night I went to the Jimmy Buffett Concert with my friend Lisa.

Is it easy to do this? Nope not by a long shot. Am I always successful at it? Nope. I haven’t met a Skinny Cow Mint Cone or Mint Ice Cream Sandwich I didn’t like – I choose to keep those items out of my house. Do I feel guilty about when I do mess up? I try not to. Why beat myself up over something as unimportant as food? There are more important things to be concerned about other than being 100 calories over my macros.

Paula’s Chocolate “Fudge” Recipe

4 Tbsp Butter
1 8 oz bar Neufchatel Cheese (1/3 light Philly cream cheese) cut into chunks
1 cup Half and Half
2 tsp Vanilla Extract
3 Tbsp Splenda
4 squares Ghiradelli 100% cacoa unsweetened chocolate baking bar – broken into smaller pieces.

Melt Butter at low temp in medium sized sauce pan. When butter has melted, add cheese and cream to pan. Whisk until smooth. Add Vanilla and Splenda into cheese mixture and whisk. When mixture is warmed through, add chocolate and whisk until melted. Pour into small buttered dish and chill til solid. Cut into 16 pieces.

These are the macros as far as I can figure out
1 piece (38 gr)
102 Calories
10g Fat
2g Carbs
2g Protein.

Suggestions
It comes out having almost a mousse-like texture to it. You can swirl in a serving of peanut butter into this too.

The Inadvertent T-shirt Biz

I inadvertently found myself in the t-shirt business this past week. I had made an avatar saying “Pink Dumbbells, Just Say NO!!” for the fitness boards I’m on. On one board, everyone started talking about wanting a t-shirt. So I went to cafepress.com and created a store. The logo I made wasn’t exactly like the image I created for the avatar (unfortunately the DB picture I used wasn’t high enough quality to make the transition to printing) but overall I’m pretty satisfied with my end results and I’ve gotten a few orders.
